Bob’s Red Mill Pancake Mix

    There is a neighborhood needlework group (about a dozen ladies) that we just refer to as Sit ‘N Stitch. Some of the husbands have more amusing names for us but we just ignore them. We meet whenever someone is inspired to host the group, usually in the morning from 9:00 to 12:00. Refreshments are generally a healthy Continental type of breakfast – beverages, fruit and muffins.

    Last week we met at Andrea’s house. Andrea and Paul are both gourmet cooks and Paul was inspired to make waffles and gluten-free pancakes for our Sit ‘N Stitch. Pancakes topped off with a drizzle of maple syrup, spread with real whipped cream, finished with a mound of fresh berries and accompanied by a hot cup of coffee – oh my! The remaining pancakes were bagged and came home with me where I had more of them for lunch . . . .

    These pancakes were light, tasty, and as good looking as any magazine layout. Pancakes are at their best while hot but I have often used leftovers as sandwich bread. And that is just another reason to add a package of this mix, Bob’s Red Mill Pancake Mix, to my pantry staples – it’s already on the shopping list.

    I love bob’s red mill pancake mix. Another one of my favorites is Pamela’s baking and pancake mix. I like to add coconut milk to make it rich and creamy. It is delicious!
